Brioche Bun Bread Pudding

While groggily perusing Pinterest this morning I came across a lemon curd bread pudding recipe. Perfect! I had some extra lemon cream and stale brioche buns that needed to be used up ASAP. This is another one of those recipes I just fudged along the way and the results were absolutely delicious. The crispy, caramelized edges of my brioche buns added lots of flavor and texture to a typical bread pudding. Between the layers of sliced brioche I slathered on about 1/2 cup of lemon cream and added the zest of an orange to the custard. I topped it off with some fresh apricot for good measure, though it’s plenty good on its own.
